First Sign of Green

Today I woke up and eventually made it in to water the seedlings, and there were a few arugula seedlings starting to make their appearance! This is one of my favorite parts of starting our own seeds! As the next few days roll by we will hopefully see a lot more of these cute little green leaves peeking out through the soil to greet us.

Quick Pizza using a Flour Tortilla

It was lunch time yesterday and I didnt have anything ready to go...oops. So I grabbed a tortilla shell out of the fridge and Addie helped me "decorate" it and we made a quick pizza with some veggies and herbs from the garden.
It turned out great and super easy!!

Into the oven at 375 degrees for about 10 minutes.

They were crispy and yummy...a perfect lunch for me and the kids :)

I have quite a bit of arugula, basil and tomatoes and since the little Tortilla Pizzas turned out so good I thought Id just make a similar pizza for dinner...

Then we topped it with our toppings and baked it at 400 degrees for about 15 minutes and tada :)

The Tomatoes are budding and we are starting to see the first little tomatoes starting to form! Very excitting and encouraging :)

The celery is starting to look good! For a while there it was really hard to tell the difference between the celery and the weeds coming up around them!

Beans, Beans and more Beans are on the way!! Im SOOO excitted.

And last but Definately NOT least is the Arugula flowers! An beautiful and tasty treat for any salad :)

This is when its starting to get FUN!!

The tomatoes in back are doing good and the Lettuce and Arugula are in front and they are doing FANTASTIC! We have already had quite a few salads from the lettuce and arugula and now the spinach is starting to take off too so that is SO fun! There is basil and chives interplanted between some of the tomatoe plants, but you cant really see them from this photo.

Tomatoes and Celery! I was a little concerned about the celery for a while because it just wasnt growing, but it is starting to take off...so are the Tomatoes! I need to get the tomatoe cages on them, but I dont have 30 tomatoe cages so I need to come up with a few more...SOON!

Onions are looking good and the carrots are starting to make themselves known! Henry is loving the carrots!

Radishes, Radishes and More Radishes!! There is some Lettuce and Arugula interplanted between the radishes, but you really cant tell the difference from this photo, it just looks like a lot of green!

Scrambled Eggs and Arugula ... yum :)

This morning Bryan went out and picked some fresh arugula that I put in with our scrambled eggs. Very fresh and Very yummy! I highly recommend giving it a try :)

Our first salad from the garden!!!

So last night for dinner I picked some lettuce and arugula and made a salad for dinner! It was SO excitting...it sounds little funny to say how excitted I was for a salad for dinner, but we started these plants from SEEDS and it is GREAT to finally get to taste it. Let me tell you it was AMAZING!!  Picked about 10 minutes before we ate it and only traveling about 100 feet, it was as fresh as you can possibly get it!

I had made some homemade croutons a couple days earlier (from homemade bread) and I also tossed it with some homemade salad dressing! The salad dressing is super easy and is just olive oil, apple cider vinegar, garlic, and honey mustard (recipe thanks to Kael!!). And of course some yummy sprouts!

Seed Starting Plug Tray 288 Cells in 1 Flat! Part 2

The 288 seedling plugs are planted! I am so excitted about this little tray! I planted 4 rows of Arugula, 3 rows of Lettuce, 4 rows of Spinach and 1 row of a different Spinach. All of these varieties say that they can be planted as fall crops so Im hoping that all goes good too. Ive never done fall crops before so we will see how this works out!

We have a lot of little spaces available in the garden that I have been told would be perfect for lettuce and spinach so as these little seedlings pop up and are ready to be transplanted I will just put them in the garden where there is space at the time. Once the radishes come up we will have space there! I still have a few weeks to figure it out though :)

I got all the seeds planted last night and then set it outside this morning for some good sunlight. I know I usually say to get the kids involved in everything, but the planting of these little seedlings might be one thing to do on your own. It took me a lot longer than I thought it would and it was very tedious! Putting one tiny little seed into the tiny little cell...Ill admit Im pretty sure that I got more than 1 seed in a few of the cells. Especially the arugula seeds, they are very similar in color to the dirt and when I would drop the tiny seed in there I would try to find it and really couldnt! So who knows what we will actually come up with! It was alot of fun, but it might be one thing to do without the "tiny little hands" involved or you will end up with hundreds of little seeds EVERYWHERE!

I put a clear tray topper on top of the tray to help keep in moisture and warmth and keep out the birds, squirrels and rabbits...as well as children :)

Garden Update Its turning GREEN!

The plants are doing good and it is great to start seeing GREEN! We had some good rain come through and it really helped the plants take off!!

ITS PLANTIN TIME!

Ok so it was time to get everything in the ground last week, but its been a chaos of a week here (family members having surgery, other family going to the emergency room, lalala... not your basic stuff). SO I know this week I have to get GOING! All my seedlings have been sitting outside (day and night) for about a week so I know they are all "hardened off" and ready to meet the ground they will be living in. Since our garden is so large I decided to take it 1 bed at a time and have it done by the end of the week...I didnt want to set insainly high goals because after all I know I will be working with 2 toddlers, 7 chickens and 2 goats...they tend to slow things down a bit...but sure do make it alot more enjoyable!

Bed 1:

We have 4 rows. (from left to right) There is arugula, then lettuce, then 2 rows of Tomatoes interplanted with some some basil and chives. Further down the row the arugula and lettuce become celery and carrots...but its not very visible on this photo. All the plants look SO small! But I have to admit I felt so proud of the little plants, we started them all as seedlings and it is great to see them finally going into the ground!!

We did an heirloom salad blend of seeds so we have several varieties of lettuce.

The tomatoes look tiny but you are supposed to plant them all the way down to the leaves to help the tomatoes get a good root system goin on! Hopefully they get growing fast!

The potatoes are comin up!!

I also got some sage planted yesterday and didnt quite get to the broccoli, but that will be today!

My mom had a bunch of sage, garlic and basil from last year that she brought over for us to plant and I am SO excitted about it. This sage is already green!

Yesterday I Also go the radishes going! These are my dads favourite and I Really just plant the radishes for him to enjoy!! I read that if you plant lettuce in with the radish seeds that it will enhance the taste of the radishes and also the lettuce...so I gave it a try! This bed looks really sad right now because all you can see is a few green lettuce heads planted about 3 feet apart...but soon it will look GREAT!! (I hope)

Ok so the end of day 1 I got a little more than 1 bed planted so that is excitting...back at it today!!! I cant wait!!
