About Me

My photo
My tremendously supportive husband & I have 3 wonderful children, 1 dog, 12 laying hens, 2 dairy goats, 3 bee hives, and a 2000 sq foot vegetable garden on a small 1/4 acre lot in the city. In the center of it all is our small 1,000 sq foot house purchased in 2008 as a foreclosure that we fully renovated to host our growing family, home school adventures, and small home business (CozyLeaf.com). We have a desire to learn a path to self sufficiency finding ways to be good stewards of the resources God has given us. We want to learn to live with less as we laydown roots to our little homestead.

Fresh Picked Micro-greens Salad

Have you ever had a fresh salad? I mean VERY fresh, like you just picked it 5 minutes before you ate it fresh! If you have, then you know that there is just about NOTHING that can compare with the flavor of a fresh picked salad!
This year I decided to try my hand at micro-greens! I have heard so much about them and how they take the taste of a salad to a whole new level! After having my first fresh picked micro-greens salad last night, I can tell you that YES YES and YES, they are right!
Most micro-greens are grown in a flat under a controlled environment. That is the main reason I haven't tried to grow them yet...I don't want to mess with another garden when I have the massive one in the backyard to tend too. So, I took a 3'x6' section on my garden and designated it the micro-greens section. Then I went to my local feed store and purchased bulk seed. They have a section of bulk seeds that you pay per scoop. I got quite a good variety: Kale, Arugula, Mixed Lettuce, Chard, Spinach...and a few others. I had about 1/2 cup of tiny little seeds that I spread evenly throughout my 3'x6' space. After a few days of good watering they came up quite nicely!

I clipped the tops off of a little 1 foot square and had a large salad. And folks let me tell ya, the taste was out of this world! I didnt even use salad dressing, I just added a tiny bit of olive oil and a dash of vinegar. I am just thrilled with these microgreens! They were much easier than I expected and ridiculously good!

So many blessings

Its been quite a busy few weeks around here! We had our precious little baby boy punctually on his due date. His name is George and he was born Thursday May 12th.

Both of Bryan's bee hives are doing fabulously and we are excited to see their daily progress. I have so much to post about Bees, but for now here are some fun photos of their progress.

And of course the baby goats!! They love to sit up on top of the picnic table and snuggle. They are growing up so fast!

The garden is in full swing with daily harvests of lettuce, arugula, and spinach for delightful salads. This first picture is of the tomatoes. We still have yet to put up the T-posts and twine to hold up our wall of tomatoes.

Bed of sweet sugar snap peas :) YUM!!

Bush beans are creeping up and will soon be in full swing!

I dont have any new photo updates of the baby chicks...which really are not babies anymore! Ill get some good photos and post those later.

Garden Update...fall planting

Its been pretty busy around here...fun and busy! The garden has been extremely productive and some of the spring plants are harvested and gone and we are onto fall planting! In the first row you can see our watermelon hills that we just planted a few days ago that took the place of all the squash and zucchini from spring planting. Then the next bed up you can see the celery looking full and the empty spot is where we had some lettuce and radishes, but that has been worked in with some compost and we planted more lettuce and some spinach and chives. The third row up is where the beans and potatoes used to be and we have harvested all those (getting over 100 lbs of vegetables from that bed alone) and are working the soil with several wheelbarrows full of compost to get ready for more bush beans, bush peas and some arugula. The 4th row is where the sweet potatoes, tobacco, peppers and basil are residing. The 5th row (which you cant see in this picture past the tobacco) has carrots, peppers, eggplant, basil, and some newly planted radishes (planted today). The 6th row has all our tomato plants (we call it the wall of tomatoes) and a row of celery in front of that. The back bed is where the asparagus was planted, but it doesn't get much sunlight because of the wall of tomatoes so I hope it makes it.

This is a close up of the sweet potatoes, they are vining out everywhere and looking really good!
The basil pretty much hides the rest of this bed...but its ok, I LOVE basil!!
Eggplant! I couldn't be happier with this heirloom variety of eggplant! This one plant alone has 4 beautiful eggplants hanging off of it waiting for harvest!

Close up of the celery and onions.

The shade is creeping in on this bed, but this is where we planted the next round of radishes.

Here is one angle of the "wall of tomatoes".

Another angle of the celery and carrots.

Sweet potatoes, with the peppers and tobacco in the back of this picture.

Eggplant.
Prepping the beds with rich compost to get ready for fall planting.

Addie was a big helper today with the compost.

Strike a pose!! Addie loves "petting" the basil, she thinks the flowers are pretty...she used to pick them and I didn't care because we had SO many, but now she has lost interest in picking the flowers she just loves to look at them and smell them.

The bees love the basil too!!

We are trying a new method of composting (well new to us anyway). Compost corral! We were having a hard time with the goats and chickens getting in the compost and moving all 3 of our organized piles together, so we thought we would give this a try with one of the piles just to see how it turned out...we'll keep you updated!!

This is when its starting to get FUN!!

The tomatoes in back are doing good and the Lettuce and Arugula are in front and they are doing FANTASTIC! We have already had quite a few salads from the lettuce and arugula and now the spinach is starting to take off too so that is SO fun! There is basil and chives interplanted between some of the tomatoe plants, but you cant really see them from this photo.

Tomatoes and Celery! I was a little concerned about the celery for a while because it just wasnt growing, but it is starting to take off...so are the Tomatoes! I need to get the tomatoe cages on them, but I dont have 30 tomatoe cages so I need to come up with a few more...SOON!

Onions are looking good and the carrots are starting to make themselves known! Henry is loving the carrots!

Potatoes

Bed of Beans and Potatoes

Radishes, Radishes and More Radishes!! There is some Lettuce and Arugula interplanted between the radishes, but you really cant tell the difference from this photo, it just looks like a lot of green!

Our first salad from the garden!!!

So last night for dinner I picked some lettuce and arugula and made a salad for dinner! It was SO excitting...it sounds little funny to say how excitted I was for a salad for dinner, but we started these plants from SEEDS and it is GREAT to finally get to taste it. Let me tell you it was AMAZING!!  Picked about 10 minutes before we ate it and only traveling about 100 feet, it was as fresh as you can possibly get it!
I had made some homemade croutons a couple days earlier (from homemade bread) and I also tossed it with some homemade salad dressing! The salad dressing is super easy and is just olive oil, apple cider vinegar, garlic, and honey mustard (recipe thanks to Kael!!). And of course some yummy sprouts!

The first of many salads to come!!

Seed Starting Plug Tray 288 Cells in 1 Flat! Part 2

The 288 seedling plugs are planted! I am so excitted about this little tray! I planted 4 rows of Arugula, 3 rows of Lettuce, 4 rows of Spinach and 1 row of a different Spinach. All of these varieties say that they can be planted as fall crops so Im hoping that all goes good too. Ive never done fall crops before so we will see how this works out!
We have a lot of little spaces available in the garden that I have been told would be perfect for lettuce and spinach so as these little seedlings pop up and are ready to be transplanted I will just put them in the garden where there is space at the time. Once the radishes come up we will have space there! I still have a few weeks to figure it out though :)

I got all the seeds planted last night and then set it outside this morning for some good sunlight. I know I usually say to get the kids involved in everything, but the planting of these little seedlings might be one thing to do on your own. It took me a lot longer than I thought it would and it was very tedious! Putting one tiny little seed into the tiny little cell...Ill admit Im pretty sure that I got more than 1 seed in a few of the cells. Especially the arugula seeds, they are very similar in color to the dirt and when I would drop the tiny seed in there I would try to find it and really couldnt! So who knows what we will actually come up with! It was alot of fun, but it might be one thing to do without the "tiny little hands" involved or you will end up with hundreds of little seeds EVERYWHERE!

I put a clear tray topper on top of the tray to help keep in moisture and warmth and keep out the birds, squirrels and rabbits...as well as children :)
