About Me

My photo
My tremendously supportive husband & I have 3 wonderful children, 1 dog, 12 laying hens, 2 dairy goats, 3 bee hives, and a 2000 sq foot vegetable garden on a small 1/4 acre lot in the city. In the center of it all is our small 1,000 sq foot house purchased in 2008 as a foreclosure that we fully renovated to host our growing family, home school adventures, and small home business (CozyLeaf.com). We have a desire to learn a path to self sufficiency finding ways to be good stewards of the resources God has given us. We want to learn to live with less as we laydown roots to our little homestead.

Quick Pizza using a Flour Tortilla

It was lunch time yesterday and I didnt have anything ready to go...oops. So I grabbed a tortilla shell out of the fridge and Addie helped me "decorate" it and we made a quick pizza with some veggies and herbs from the garden.
It turned out great and super easy!!

Cheese, Tomatoes, Basil and Arugula

Addie got a good picture of her feet...mostly these are the only kinds of pictures the kids take!
Addie wanted to take a picture of me and the "grubbies" ...this is one of about 20 pictures that Addie took and this is pretty much the only one that isnt completely blurry :)
Into the oven at 375 degrees for about 10 minutes.
They were crispy and yummy...a perfect lunch for me and the kids :)

I have quite a bit of arugula, basil and tomatoes and since the little Tortilla Pizzas turned out so good I thought Id just make a similar pizza for dinner...
Addie helps me get the pizza dough all ready (pizza dough recipe here)
Then we topped it with our toppings and baked it at 400 degrees for about 15 minutes and tada :)
